Israeli Salad
- 2 large cucumbers
- 1 pint cherry tomatoes, sliced in half lengthwise
- ¼ cup fresh feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons mint
- 2 tablespoons parsley
- 1 tsp cumin
- Juice of half a lemon
- Salt and pepper to taste
- Combine all ingredients in a large bowl, gently toss, and season with salt and pepper to taste.
