Tips for a Stress-Free Thanksgiving Meal

Thanksgiving is hands down one of the best foodie holidays all year, but it can also turn into one of the most stressful ones! Here are my tips on making the holiday as simple and stress-free as possible–and a few of my favorite recipes to add to your Thanksgiving menu! 

  1. Plan ahead:  Creating a timeline with a game plan of how and when you’ll cook each dish is the most surefire way to eliminate day-of stress.Williams Sonoma puts out a great expert Thanksgiving timeline every year!
  2. Order a cooked turkey: Since roasting a turkey is often the hardest part (There are so many questions! How long do you defrost it for? How do you season it? How do you slice it?!), don’t be afraid to order a pre-cooked bird from a local restaurant or supermarket, or for a smaller crowd buy pre-sliced turkey from a high quality store. Your guest won’t know the difference, I promise!
  3. Clean as you go: My mom taught me this one and I’ll never forget it. Wiping down counters, putting away ingredients, and keeping the trash and recycling empty as you cook makes clean up so much more manageable. Thanks, Mom! 
  4. Make a double recipe of stuffing: It’s so popular that it’s always the first to go at our house! Be sure to use plenty of moisture so it keeps for those wonderful after-Thanksgiving leftovers.
  5. Know your audience: It’s always the worst when you make your favorite family recipe only to find out that your guest is allergic to gluten and everything else under the sun. Politely ask guests a week before if they have any allergies, or better yet, add a line to your e-invites to make sure you have your bases covered. 
  6. Chop in advance: If you really want to get ahead of the game, chop up veggies (hello, onions), herbs, and garnishes one day in advance. Herbs can be placed in a plastic bag with a damp paper towel. 

  7. Add some blooms: Take a bloom from the centerpiece and put it in a bud vase in the guest bathroom. Want to make a big impact? A little filler, like eucalyptus, can help to give your arrangements an extra wow factor. 
  8. Prep snacks: I don’t know about you, but cooking always makes me so hungry!  like to prep some healthy snacks, like apple slices or chopped veggies, to stay satisfied while cooking all day so I don’t eat as much when the big meal is finally ready. 
  9. Start a day early: Our family usually also makes a couple sides–like stuffing or yams–a day early, so that on Thanksgiving Day we only have to cook the turkey and a few of the lighter sides and can spend more time actually enjoying the day. The same goes for setting your table place settings.
  10. Include everyone: In my experience, everyone likes playing a small part if you ask them to. Set aside a few jobs, like chopping or opening the wine, for anyone who wants to help out. 

Not sure how much food to make? Food 52 created this great go-to guide to help you determine how much you’ll need of each dish for the average guest. For drinks, most people recommend about 8 bottles of wine for 12 people.

Holiday Traditions

One of my family’s favorite traditions is making fresh, warm, melt in your mouth chocolate croissants every Christmas morning–it is such a treat and literally feels like waking up in Paris! Our trick is that we get a little help from Williams Sonoma, who sells boxes of these beautiful croissants baked by their in-house pastry chef, Jean-Yves Charon. These little beauties arrive in a big box of dry ice and a box of 15 usually lasts us through to the next year for other holidays, from New Year’s Day to birthdays during the year. Just set them out to let them rise overnight, add an egg wash in the morning, bake for 15 minutes, and voila! A perfect Parisian Christmas in the comfort of your own kitchen.  Bon appetit!

DIY Bruschetta Bar

Hello friends! If you’ve been following the blog recently, you’ve probably noticed that I’ve been taking full advantage of some of the beautiful summer produce out there (see last week’s peach, avocado and heirloom tomato salad  and this quinoa salad !), and this week is no exception. 

After grabbing some produce at the Farmer’s Market, I recently stopped by one of my favorite markets in LA, Bay Cities, to pick up fresh bread and burrata cheese for a lunchtime bruschetta bar. They bake homemade ciabatta bread every afternoon and have some of the best selections of imported cheese and meats in the city–so good that my Greek grandmother used to go there back in the day for her ingredients! It’s quick and easy to assemble, and a great option for entertaining since everyone can make their own bruschetta combination 🙂 

Here are my top three combinations:

1. Sweet: Ciabatta, burrata cheese, sweet yellow peaches, basil, mint, olive oil 

2. Savory: Ciabatta, burratta cheese, prosciutto, pesto, olive oil 

3. Classic: Ciabatta, burratta, sliced tomatoes, olive oil, balsamic vinegar, finely chopped basil

Crockpot BBQ Pulled Chicken

There’s nothing more quintessentially American than a good BBQ dish. In preparation for the Fourth of July next Monday, I’m sharing one of the quickest, simplest BBQ recipes out there. It doesn’t require a grill or any crazy marinade times, and you can literally cook it overnight so that it’s ready for you when you wake up. As my one of my favorite chefs, Ina Garten, always says, how easy is that? 

The steps are so easy. First, add two pounds of boneless, skinless chicken breast to your slow cooker, pouring over about 12 oz. of your favorite BBQ sauce (I use Sweet Baby Ray’s),  1/4 cup brown sugar, 1/4 white vinegar, and 1/2 teaspoon garlic powder. Make sure all ingredients are evenly distributed and cover on high heat for 4 hours.

After a while, you’ll see that the natural juices in the chicken will create a more watered down sauce. Let sit for another 2 hours until this thickens and is completely absorbed.

After 4-6 hours, remove chicken from crockpot and shred into pieces. You may need to mix in some additional sauce for extra flavor as desired…

Finally, serve on a brioche bun with the side of your choice and enjoy! This recipe keeps especially well in the fridge and I think it actually gets better overnight.

Easter Entertaining

Easter is one of my favorite days of the year! Here’s a roundup of some of my favorite entertaining tips to make the day extra colorful:

Sweet: I love the idea of using this recipe from Barefoot Contessa–the most heavenly coconut cupcakes with cream cheese frosting–and topping them with little candy eggs.

Savory: I’m also loving this feature from The Everygirl on building the perfect cheese board, including everything you need to know about cheese types, presentation, and pairings.

Eat: Since I’m half Greek, I grew up trying a lot of different recipes for Greek Easter. My absolute favorites are this recipe for traditional Greek bread and this recipe for rack of lamb lamb and slow-roasted potatoes. We let it cook all afternoon with some oregano, olive oil, and lemon and it’s one of my favorite meals all year long.

Decorate: The simplest (and most budget friendly) centerpiece:

IF: Table

Hello friends, I am so thrilled to share this post with you today!! For those of you who are regular followers and saw my Valentine’s Day Entertaining post, I had an incredible French-themed Valentine’s Day dinner with about ten girlfriends here in DC to celebrate friendship and sisterhood. There was so much laughter, beautiful food, (and of course, chocolate!), and it was one of the best nights I’ve had in a long time. Most importantly, what I really loved is that our table was filled with truly women who shared a love of Jesus and a desire to be His hands and feet in our community in a pilot of something called the IF: Table. 

For those of you who haven’t heard of the IF: Gathering before, it’s an amazing movement of Christian woman all of the country seeking to answer one critical question: “If God is real, then how do we live our lives?” Their ultimate vision is to gather, equip, and unleash women to live out their calling.

Enter: IF: Table,  the “gathering” piece. The goal? Bring together a group of 6 (or more) women who meet on the second Sunday of every month to share a simple potluck meal and dive deep with other women over real stories and Christ centered conversations. The amazing IF team provides conversation cards–and even recipes!–every month and leaves the cooking and discussion to us! Some of this month’s questions that really stuck with our group:

  • How can we, as women, do a better job of  breaking down barriers that separate us and building each other up?
  • How can we do a better job loving one another and our community, our co-workers, our neighborhood – so that the world would know us as disciples? 

I am so excited for next month’s meeting, where we’ll be gathering for an amazing Italian dinner! We’ll be adding a justice component each month as well where we discuss a pressing issue in our local or global community and what steps we can take to serve, from sex trafficking to homelessness and beyond.

No matter how skilled of a cook you are (and I’ve got you covered on recipes!), I can’t say enough how powerful this simple idea is. As women, we all come from  different places, different stories, different struggles, but we all bring something to the table in God’s Kingdom. God wants to use your story and there’s nothing more beautiful than sharing life with another sister as we seek to serve Him together through all seasons of life. Never underestimate the power that one small group can have to change the world.

Valentine’s Day Entertaining

Valentine’s Day is one of those love it or hate it kind of days. But regardless of how you feel about the holiday, I find that it’s a great mid-winter excuse to entertain friends,  not to mention to pull out the chocolate and some sweet pink flowers, a few of my favorite things!

This year, I’m putting together a French-themed dinner party for a few dear girlfriends in the city. Here are some of my favorite tablescape ideas to inspire you as you plan your own Valentine’s Day bash.

Something pink: Flowers can be expensive–especially in the winter!–but I love this idea from the Flair Exchange of making mini customized bouquets for friends. Thanksgiving Tablescapes

Hello friends!  I hope you are all excited for Thanksgiving next week–I know I am! I’ll be heading back to California to spend time with my family and couldn’t be more excited to spend time with them and enjoy the beautiful sunshine.

As you start preparing your meal menus, I thought I would do something a bit different and pull together a roundup of some of my favorite Thanksgiving centerpieces to give you some decorating inspiration. Later this week I’ll also be sharing some of my favorite healthy sides, and my recipe for homemade apple pie. Stay tuned!

First, this metallic pumpkin table runner immediately caught my eye. I love the contrast between the burlap and the golden pumpkins and pinecones. If you have some extra time on your hands and can pick up gold paint, it really is a budget-friendly idea that still looks super luxe and will surely impress your guests.

Feeling rustic? Skip the expensive florists, this centerpiece would look great with fresh cut garden roses and even some old containers you might have around the house.

Fourth of July Tasting Menu

The Fourth of July has always been one of my very favorite holidays. It’s the perfect holiday right in the middle of summer and it’s so reminiscent of all of my favorite things–sunshine, beach days, picnics, sundresses, and quality time with family and friends. Here’s the tasting menu I made this year, including strawberry mint salad, pulled BBQ chicken sandwiches, assorted vegetable kabobs, rosemary sweet potato fries, and a decadent gluten free blueberry crisp to top things off.
